  • 1 1/2 lbs boneless, skinless chicken breasts, diced
  • 3 carrots, peeled and chopped
  • 2 celery ribs, chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 4 cups chicken broth
  • 1 cup whole milk
  • 1/2 cup all-purpose flour
  • 1/4 cup unsalted butter
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 refrigerated pie crusts


  1. In a large skillet, melt the butter over medium heat. Add the onions, carrots, and celery, and cook until the vegetables are tender, about 5 minutes.
  2. Add the diced chicken and garlic to the skillet. Cook until the chicken is no longer pink.
  3. Sprinkle the flour over the chicken and vegetables. Stir to combine and cook for 1-2 minutes.
  4. Slowly add the chicken broth and milk to the skillet, stirring constantly until the mixture thickens.
  5. Stir in the frozen peas, corn, dried thyme, salt, and pepper.
  6. Preheat your oven to 425°F (220°C).
  7. Place one pie crust in a pie dish. Pour the chicken and vegetable mixture into the crust.
  8. Top with the second pie crust and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.
  9. Bake for 30-35 minutes or until the crust is golden brown.
  10. Let it cool for a few minutes before serving.
