Ingredients

  • 2 red bell peppers, roasted and peeled

Instructions

  1. Start by roasting the red bell peppers. Preheat your oven to 450°F (230°C). Place the whole peppers on a baking sheet and roast for about 30 minutes, turning occasionally until the skins are charred and blistered.
  2. Remove the peppers from the oven and place them in a bowl. Cover with plastic wrap and let them cool for 15 minutes. This will make it easier to peel off the skins.
  3. While the peppers are cooling, cook the fettuccine pasta according to the package instructions until al dente. Drain and set aside.
  4. Once the peppers have cooled, peel off the skins, remove the seeds and stems, and roughly chop them.
  5. In a blender, combine the roasted red peppers, heavy cream, grated Parmesan cheese, minced garlic, salt, and pepper. Blend until smooth and creamy.
  6. In a large skillet, melt the butter over medium heat. Pour in the red pepper Alfredo sauce and stir until heated through.
  7. Add the cooked fettuccine pasta to the skillet and toss to coat the pasta evenly with the sauce.
  8. Serve hot, garnished with fresh basil leaves and extra grated Parmesan cheese if desired.
