  2. Place the saucepan over medium heat, stirring gently until the sugar dissolves and the mixture is hot but not boiling. Remove from heat and let the vanilla steep for 15-20 minutes.
  3. In a small bowl, sprinkle the gelatin over the cold water and let it bloom for about 5 minutes.
  4. Remove the vanilla pod from the cream mixture and reheat the mixture until it’s warm.
  5. Add the bloomed gelatin to the warm cream mixture, stirring until the gelatin is completely dissolved.
  6. Strain the mixture through a fine mesh sieve to ensure a silky-smooth texture.
  7. Divide the mixture into individual ramekins or serving glasses. Refrigerate for at least 4 hours or until set.
  8. Before serving, garnish with fresh berries and mint leaves.
