Ingredients

  • 1 pint fresh raspberries
  • 2 tablespoons raspberry jam
  • Mint leaves for garnish

Instructions

  1. Start by preparing the crust. In a food processor, combine the flour, cocoa powder, and salt. Pulse a couple of times to mix.
  2. Add the cold cubed butter and pulse until the mixture resembles coarse crumbs.
  3. In a small bowl, whisk together the egg yolk and vanilla extract. Add it to the food processor and pulse until the dough comes together.
  4. Press the dough into a tart pan, making sure to evenly cover the bottom and sides. Refrigerate for 30 minutes.
  5. Preheat the oven to 375°F (190°C). Line the crust with parchment paper and fill it with pie weights or dried beans.
  6. Bake the crust for 15 minutes, then remove the parchment paper and weights. Bake for an additional 10 minutes until the crust is set. Let it cool completely.
  7. In a saucepan, heat the heavy cream until it’s just about to boil. Remove from heat and add the chopped dark chocolate. Let it sit for a minute, then stir until smooth and glossy.
  8. Pour the chocolate ganache into the cooled tart shell and spread it evenly. Refrigerate for 1 hour to set.
  9. Arrange the fresh raspberries on top of the ganache, pressing them slightly into the chocolate.
  10. In a microwave-safe bowl, heat the raspberry jam until it’s slightly melted. Gently brush the raspberries with the melted jam.
  11. Garnish the tart with mint leaves for a burst of color and freshness.
