  1. Press the cubed tofu between paper towels to remove excess moisture.
  2. In a bowl, whisk together soy sauce and sesame oil. Add tofu cubes and let marinate for 15-20 minutes.
  3. Heat a large pan or wok over medium-high heat. Add marinated tofu and cook until golden brown. Remove tofu from the pan and set aside.
  4. In the same pan, add a bit of sesame oil and minced garlic. Sauté until fragrant.
  5. Add sliced bell pepper, broccoli florets, julienned carrot, and snap peas. Stir-fry until the vegetables are crisp-tender.
  6. In a small bowl, mix hoisin sauce, sriracha, and vegetable broth. Pour over the vegetables.
  7. Add the cooked tofu back to the pan. Toss everything together to coat in the sauce.
  8. Serve the stir-fry over cooked brown rice.
  9. Garnish with chopped peanuts and sliced green onions.
