  6. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  7. In a small saucepan, heat the heavy cream until it starts to simmer. Remove from heat and pour over the chopped dark chocolate. Let it sit for a minute, then whisk until smooth to create the ganache.
  8. Place one cake layer on a serving plate. Spread a layer of ganache over the top and scatter fresh raspberries.
  9. Place the second cake layer on top and cover the entire cake with the remaining ganache.
  10. Decorate with additional raspberries and drizzle with melted dark chocolate, if desired.
