Healthy Quinoa & Veggie Stir-Fry

  • 1 cup of quinoa
  • 2 cups of water
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup of broccoli florets
  • 1 cup of snap peas
  • 1/4 cup of low-sodium soy sauce
  • 1 tablespoon of honey
  • 1 teaspoon of ginger, grated
  • 1/2 teaspoon of red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh cilantro for garnish


  1. Rinse the quinoa under cold water and drain.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the water is absorbed. Remove from heat and fluff with a fork.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and minced garlic, and sauté for 2-3 minutes until fragrant.
  4. Add the sliced red and yellow bell peppers, zucchini, broccoli florets, and snap peas to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  5. In a small bowl, whisk together the soy sauce, honey, grated ginger, and red pepper flakes (if using).
  6. Pour the sauce over the stir-fried vegetables and stir to coat evenly. Cook for an additional 2 minutes.
  7. Serve the stir-fried vegetables over cooked quinoa. Garnish with fresh cilantro, and season with salt and pepper to taste.
