Ingredients

  • 2 pounds of beef stew meat, cut into bite-sized pieces
  • 2 cups of sliced mushrooms
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 carrots, peeled and chopped
  • 4 potatoes, peeled and diced
  • 1 cup of frozen peas
  • 4 cups of beef broth
  • 1 cup of red wine
  • 2 tablespoons of tomato paste
  • 2 teaspoons of dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Heat a large pot or Dutch oven over medium-high heat. Add a bit of oil and brown the beef stew meat on all sides. Remove the meat from the pot and set it aside.
  2. Add the chopped onion, garlic, and sliced mushrooms to the pot. Sauté until the onions are translucent and the mushrooms are tender.
  3. Stir in the tomato paste and cook for a couple of minutes.
  4. Pour in the red wine and beef broth, and add the bay leaves and dried thyme. Bring the mixture to a boil.
  5. Return the browned beef stew meat to the pot. Reduce the heat to low, cover, and simmer for about 1.5 to 2 hours, or until the meat is tender.
  6. Add the chopped carrots and diced potatoes to the stew. Simmer for another 20-30 minutes until the vegetables are tender.
  7. Stir in the frozen peas and cook for an additional 5 minutes until they are heated through.
  8. Season the stew with salt and pepper to taste. Remove the bay leaves before serving.
