- 6 large egg yolks
- 3/4 cup granulated sugar
- 1 cup mascarpone cheese

- 1 package ladyfingers (about 24)
- Unsweetened cocoa powder, for dusting

- In a heatproof bowl, whisk together the egg yolks and sugar. Place the bowl over a pot of simmering water (double boiler) and whisk constantly until the mixture thickens and becomes pale. Remove from heat and let it cool.
- Add the mascarpone cheese to the egg yolk mixture and mix until smooth.

- Cover and refrigerate for at least 4 hours or overnight.
