Ingredients

  • 8 rice paper wrappers
  • 1 cup julienned carrots
  • 1 cup thinly sliced cucumber
  • 1 cup red bell pepper strips
  • 1 cup fresh cilantro leaves
  • 1 cup mint leaves
  • 1 cup cooked vermicelli noodles
  • 8 large lettuce leaves
  • 1/2 cup chopped roasted peanuts
  • Soy dipping sauce, for serving

Instructions

  1. Gather all the fresh ingredients and prepare them on your cooking station.
  2. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 10 seconds until it’s pliable.
  3. Place the damp wrapper on a clean surface and start layering your ingredients. Begin with a lettuce leaf, followed by a small portion of vermicelli noodles, julienned carrots, sliced cucumber, red bell pepper strips, cilantro, and mint leaves.
  4. Sprinkle some chopped peanuts on top for an extra crunch.
  5. Roll the bottom of the wrapper over the ingredients, tuck in the sides, and continue rolling tightly until sealed.
  6. Repeat the process with the remaining ingredients.
  7. Slice each spring roll in half diagonally and serve with a side of soy dipping sauce.
