Ingredients
- 2 cups Arborio rice
- 4 cups chicken or vegetable broth
- 1 cup dry white wine
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 cup grated Parmesan cheese
- ยฝ cup heavy cream
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil and melt the butter over medium heat. Add the chopped onion and sautรฉ until translucent.
- Add the minced garlic and Arborio rice to the pot. Cook for 2-3 minutes, stirring constantly, until the rice is lightly toasted.
- Pour in the dry white wine and cook until it’s mostly absorbed by the rice.
- Gradually add the chicken or vegetable broth, one ladleful at a time, stirring frequently. Allow each ladleful to be absorbed before adding more broth. Continue this process until the rice is creamy and cooked to al dente.
- Stir in the heavy cream and grated Parmesan cheese until the risotto is creamy and the cheese is melted. Season with salt and pepper to taste.
- Remove from heat and let the risotto rest for a few minutes before serving.
