One-Pot Creamy Garlic Parmesan Risotto

  • 2 cups Arborio rice
  • 4 cups chicken or vegetable broth

  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • ½ cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish


  1. In a large pot, heat the olive oil and melt the butter over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic and Arborio rice to the pot. Cook for 2-3 minutes, stirring constantly, until the rice is lightly toasted.
  3. Pour in the dry white wine and cook until it’s mostly absorbed by the rice.
  4. Gradually add the chicken or vegetable broth, one ladleful at a time, stirring frequently. Allow each ladleful to be absorbed before adding more broth. Continue this process until the rice is creamy and cooked to al dente.
  5. Stir in the heavy cream and grated Parmesan cheese until the risotto is creamy and the cheese is melted. Season with salt and pepper to taste.
  6. Remove from heat and let the risotto rest for a few minutes before serving.
