Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes.
  4. In a large mixing bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
  5. Spoon the quinoa mixture into the hollowed bell peppers.
  6. Place the stuffed peppers in a baking dish. Add a splash of water to the bottom of the dish.
  7. Cover the dish with aluminum foil and bake for 25-30 minutes, or until the peppers are tender.
  8. Remove the foil, sprinkle shredded cheddar cheese on top of each pepper, and bake for an additional 5 minutes until the cheese is melted and bubbly.
  9. Garnish with fresh cilantro before serving.
