Quinoa-Stuffed Peppers: Healthy & Filling

Ingredients
- 4 large bell peppers, any color
- 1 cup quinoa, rinsed and drained
- 1 3/4 cups vegetable broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup shredded cheddar cheese
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers, remove the seeds and membranes, and set aside.
- In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed.
- In a large mixing bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, red onion, shredded cheddar cheese, cumin, paprika, salt, and pepper. Mix well.
- Stuff the bell peppers with the quinoa mixture, pressing gently to pack it in.
- Place the stuffed peppers in a baking dish. Add a splash of water to the bottom of the dish to create steam.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
- Remove the foil and bake for an additional 10 minutes, allowing the cheese to melt and lightly brown.
- Remove from the oven and let cool slightly before serving.
