Ingredients

  • 4 large bell peppers, any color
  • 1 cup quinoa, rinsed and drained
  • 1 3/4 cups vegetable broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup shredded cheddar cheese
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers, remove the seeds and membranes, and set aside.
  2. In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed.
  3. In a large mixing bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, red onion, shredded cheddar cheese, cumin, paprika, salt, and pepper. Mix well.
  4. Stuff the bell peppers with the quinoa mixture, pressing gently to pack it in.
  5. Place the stuffed peppers in a baking dish. Add a splash of water to the bottom of the dish to create steam.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
  7. Remove the foil and bake for an additional 10 minutes, allowing the cheese to melt and lightly brown.
  8. Remove from the oven and let cool slightly before serving.
