Instructions

  1. Start by making the galette dough. In a bowl, mix the flour and salt. Add in the diced cold butter and work it into the flour until the mixture resembles coarse crumbs. Gradually add cold water and knead until the dough comes together. Shape into a disc, wrap in plastic, and refrigerate for 30 minutes.
  2. In a pan, heat olive oil and sauté the garlic until fragrant. Add the sliced mushrooms and cook until they’re golden and the moisture has evaporated. Season with salt and pepper. Remove from heat and let it cool.
  3. Preheat your oven to 375°F (190°C). Roll out the chilled dough on a floured surface to a 12-inch circle. Transfer it to a baking sheet.
  4. Sprinkle half of the grated Gruyere cheese onto the center of the dough, leaving about 2 inches of border. Spread the sautéed mushrooms over the cheese. Sprinkle the remaining cheese over the mushrooms.
  5. Gently fold the edges of the dough over the filling, creating pleats as you go. Brush the folded edges with the beaten egg wash.
  6. Bake for 25-30 minutes, or until the galette is golden brown and the cheese is bubbly.
  7. Once out of the oven, garnish with fresh thyme leaves. Allow it to cool slightly before slicing.
