Ingredients

  • 4 large bell peppers, any color you prefer
  • 1 cup quinoa, rinsed and drained

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the bell peppers by cutting off the tops and removing the seeds and membranes. Set aside.
  3. Rinse the quinoa under cold water until the water runs clear.
  4. In a saucepan, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
  5. Add the minced garlic, dried oregano, dried thyme, and smoked paprika to the saucepan. Sauté for another minute until fragrant.
  6. Stir in the quinoa and vegetable broth. Season with salt and pepper. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes or until the quinoa is cooked and the liquid is absorbed.
  7. Remove the saucepan from the heat and stir in the diced tomatoes.
  8. Stuff each bell pepper with the quinoa mixture and place them in a baking dish. Add a sprinkle of grated cheddar cheese on top of each stuffed pepper.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes or until the peppers are tender.
  10. Remove the foil and bake for an additional 5-10 minutes until the cheese is bubbly and golden.
  11. Garnish with fresh parsley before serving.
