  • 2 medium-sized eggplants
  • 1 cup cooked quinoa

  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil


  1. Cut the eggplants in half lengthwise and scoop out the flesh, leaving about a 1/2-inch border. Chop the scooped-out eggplant flesh into small pieces.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the chopped eggplant flesh to the skillet and cook until softened.
  4. Stir in diced tomatoes, cooked quinoa, chopped Kalamata olives, dried oregano, salt, and pepper. Cook for another 2-3 minutes.

  8. Once cooked, remove from the oven and let them cool slightly before serving.
