  • 2 cups Arborio rice

  2. In a separate large pan, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent.

  4. Pour in the white wine and cook until it’s mostly absorbed by the rice.
  5. Begin adding the warm vegetable broth, one ladleful at a time. Allow each addition to be absorbed by the rice before adding more. Stir gently and consistently.
  6. When the rice is almost cooked and has a creamy consistency, stir in the sliced mushrooms and minced garlic.
  7. Continue adding the broth and stirring until the rice is creamy and cooked to perfection. This process should take about 18-20 minutes.
  8. Remove the risotto from heat and stir in the remaining tablespoon of butter and grated Parmesan cheese. Season with salt and pepper to taste.
  9. Let the risotto rest for a couple of minutes before serving.
