  1. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  2. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes or until quinoa is cooked and liquid is absorbed.
  3. Preheat the oven to 375°F (190°C).
  4. In a large mixing bowl, combine cooked quinoa, black beans, corn, diced tomatoes, ground cumin, smoked paprika, salt, and pepper. Mix well.
  5. Stuff each bell pepper with the quinoa mixture and place them in a baking dish.
  6. Sprinkle shredded cheddar cheese over the stuffed peppers.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, until the peppers are tender.
  8. Remove the foil and bake for an additional 5 minutes to melt and lightly brown the cheese.
  9. Remove from the oven and let cool slightly before serving.
  10. Garnish with chopped fresh cilantro before serving.
