Ingredients

  • 4 large bell peppers, any color
  • 1 cup quinoa, rinsed

  • 1 teaspoon cumin

  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed.
  4. In a mixing bowl, combine cooked quinoa, black beans, corn, diced tomatoes, cumin, paprika, garlic powder, salt, and pepper.
  5. Spoon the quinoa mixture into the hollowed-out bell peppers.
  6. Place the stuffed peppers in a baking dish and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
  7. Remove from the oven and sprinkle shredded cheddar cheese on top of each pepper. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a few minutes before serving.
  9. Garnish with fresh cilantro leaves before serving.
