  • 4 large bell peppers, any color
  • 1 cup quinoa, rinsed and drained
  • 1 ¾ cups vegetable broth

  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • 1 cup shredded cheddar cheese

  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish.
  3. In a saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed.
  4. In a large mixing bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, chili powder, cumin, half of the shredded cheese, salt, and pepper. Mix well.
  5. Spoon the quinoa mixture into the prepared bell peppers. Top with the remaining shredded cheese.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
  7. Remove from the oven and let cool slightly before serving. Garnish with fresh cilantro.
