Spinach & Ricotta Stuffed Shells

Ingredients
- 1 box of jumbo pasta shells
- 2 cups of ricotta cheese
- 2 cups of fresh spinach, chopped
- 1 cup of grated Parmesan cheese
- 1 egg, beaten
- 2 cups of marinara sauce
- 1 cup of shredded mozzarella cheese
- 1 teaspoon of garlic powder
- Salt and pepper to taste
Instructions
- Start by cooking the jumbo pasta shells according to the package instructions. Drain and set aside.
- In a large mixing bowl, combine the ricotta cheese, chopped spinach, grated Parmesan cheese, beaten egg, garlic powder, salt, and pepper. Mix until well combined.
- Preheat your oven to 350°F (175°C).
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Fill each cooked pasta shell with a generous spoonful of the ricotta and spinach mixture and place them in the baking dish.
- Once all the shells are filled, top them with the remaining marinara sauce and sprinkle the shredded mozzarella cheese on top.
- Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
- Remove from the oven and let it cool for a few minutes before serving.
