Vegan Quinoa Stuffed Peppers

  • 4 large bell peppers, any color
  • 1 cup quinoa, rinsed and drained

  • 1/2 cup finely chopped onion

  1. Rinse the quinoa under cold water and drain.
  2. In a saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed.
  3. Preheat the oven to 375°F (190°C).
  4. Cut the tops off the bell peppers and remove the seeds and membranes.
  5. In a large bowl, mix the cooked quinoa, black beans, corn, diced tomatoes, onion, garlic, cumin, smoked paprika, salt, and pepper.
  6. Spoon the quinoa mixture into the prepared bell peppers.
  7. Place the stuffed peppers in a baking dish and cover with aluminum foil.
  8. Bake for 25-30 minutes, until the peppers are tender.
  9. Remove the foil and bake for an additional 5 minutes to lightly brown the tops.
  10. Garnish with fresh cilantro before serving.
