Vegan Quinoa Stuffed Peppers

Ingredients
- 4 large bell peppers, any color
- 1 cup quinoa, rinsed and drained
- 2 cups vegetable broth
- 1 can (15 oz) black beans, drained and rinsed

- 1 cup diced tomatoes
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste

Instructions
- Rinse the quinoa under cold water and drain.
- In a saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed.
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix the cooked quinoa, black beans, corn, diced tomatoes, onion, garlic, cumin, smoked paprika, salt, and pepper.
- Spoon the quinoa mixture into the prepared bell peppers.
- Place the stuffed peppers in a baking dish and cover with aluminum foil.
- Bake for 25-30 minutes, until the peppers are tender.
- Remove the foil and bake for an additional 5 minutes to lightly brown the tops.
- Garnish with fresh cilantro before serving.
