Ingredients
- 1 pound of boneless chicken breast
- 1 cup of broccoli florets
- 1 red bell pepper, thinly sliced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1/4 cup of soy sauce
- 2 tablespoons of honey
- 1 teaspoon of cornstarch
- Cooked rice for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken breast and cook for 3-4 minutes per side until browned and cooked through.
- Remove chicken from the skillet and set aside.
- In the same skillet, add garlic, bell pepper, and broccoli. Sauté for 3-4 minutes until the vegetables are tender.
- In a small bowl, whisk together soy sauce, honey, and cornstarch.
- Return the chicken to the skillet and pour the sauce over it.
- Stir everything together and cook for an additional 2 minutes until the sauce thickens.
- Serve the chicken and vegetable stir-fry over cooked rice.
- Sprinkle with sesame seeds if desired.
